Chef Zam’s Roast Chicken
INGREDIENTS
- 1 whole chicken - cleaned & patted dry
- Salt & pepper to taste
- 2 teaspoons olive oil
- 1 lemon - zested then quartered
- 3 rosemary sprigs
- 100g unsalted butter - melted
- 3 garlic cloves - minced
- 1 tablespoon sage - finely chopped
- 1 tablespoon parsley - finely chopped
- 2 teaspoons rosemary - finely chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 onion - quartered
- 1 carrot - cut into large chunks
- 1 garlic bulb - halved horizontally
INSTRUCTIONS

Preheat the oven to 200ﹾC.

Combine 1 tablespoon unsalted butter with the lemon zest.

Using your fingers, carefully separate the chicken skin from breast of chicken, placing the prepared lemon butter under the skin. Take care not to poke any holes in the chicken skin when placing and smoothing the butter.

Now, using your hand again, press on top of the skin across the breast on each side, smoothing out the butter that was placed beneath.

Stuff the cavity of the chicken with the herb bundle, lemon quarters, and both halves of the garlic head.

Scatter quartered onions and carrots into a large well-greased casserole then place the chicken on top. Brush extra virgin olive oil or the remaining unsalted butter over the outside of the chicken; season with salt and pepper.

Roast the chicken, uncovered, in the preheated 200ﹾC oven on the center rack for 30 minutes. The skin should be pretty golden brown at this point.

Reduce the heat to 180ﹾC and continue roasting for another 50-55 minutes, or until chicken juices run clear and the skin turns crispy, golden brown.
- Rest for 15-20 minutes before serving.
