1. Salmon and Bok Choy Green Coconut Curry

If you love salmon and curry (who doesn't?), this one’s for you. This dish sings of the flavors of ginger, garlic, green curry paste, roasted cashews, bok choy, salmon, and creamy coconut milk. Topped with scallions and cilantro, and paired with a side of rice, the whole meal comes together in just about 35 minutes and serves 4.

 

2. Chicken Fajitas

Never thought you could make Fajitas? Guess what? Now you can, and they are pretty easy to make too. All you need are chicken breasts, bell peppers, onions, lime juice, red pepper flakes, and cumin to make this dish. It takes a little sautéing and then everything is ready to go into a warm tortilla. You can add toppings of your choice such as sliced jalapenos, cheddar cheese, guacamole, and a dash of hot sauce. 

 

3. Minestrone Soup

Old-fashioned comfort food that warms your belly and your soul at the same time. But instead of eating it from the can, make it yourself! For this recipe, all you need are potatoes, onions, celery, bacon, cannellini beans, plum tomatoes, greens (kale, spinach), and whole wheat pasta. The ingredients are slow-cooked together, then served with parmesan cheese and fresh basil - it’s a delicious, hearty soup your whole family will love.

Coq Au Vin, or chicken in red wine, is an earthy, hearty meal with chicken, carrots, onion,  mushrooms, garlic, red wine, chicken stock, and thyme. The meat and vegetables are braised in red wine, chicken stock, and seasonings, and then a flour and butter roux thickens the broth into a rich-tasting gravy that makes this into a delicious hunter’s stew. This is best served hot with a piece of crusty bread to soak up the gravy.

 

5. Lasagna Soup

If you are a big fan of Italian food, you will love this version of lasagna in soup form! This recipe begins with browning your meat, then adding garlic and onions into the pan for a quick sauté. Chicken stock, spaghetti sauce, diced tomatoes, and lasagna noodles broken up into bite-size pieces then added in and simmered till the noodles are cooked. Once done, the soup is topped with cheese - ricotta, parmesan, and mozzarella, for that oozy goodness. 

 

6. Cheesy Taco Skillet

This dish is made up of ground beef, chopped onions, diced tomatoes, black beans, chopped black olives, green onions, chili powder, cumin, Monterey jack cheese, and cheddar cheese. It sounds like a lot of ingredients but all it takes is a little sautéing and it’s done! The meat mixture can be scooped into your taco shells and topped with cheese, a dollop of sour cream, and your favorite guacamole or salsa. 

7. One-Pot Spaghetti Recipe

The rice is cooked first in herbs, spices, and stock, then the vegetables and meat are stir-fried separately before serving together. This is a healthy and delicious homemade meal, done in just 30 minutes.
